Last Saturday marked the start of the maple syrup tapping season in West Virginia. A special ceremony, sponsored by the West Virginia Maple Syrup Producers Association, was hosted at the Spring Hill Cemetery. When the state gets freezing nights and above freezing daytime temperatures the maple trees produce their sap to make syrup. The season will run through the middle of March.
